Roasted Butternut Squash


  • 1 butternut squash peeled, seeded, and chopped
  • 2 Tbs melted butter organic, pasture raised, grass fed
  • ½ tsp cinnamon
  • 1/8 tsp cayenne
  • 2 tsp maple syrup
  • salt and pepper to taste
  • I recommend using organic ingredients when possible.


  • Preheat oven to 400 degrees.
  • Peel, seed and chop the squash into bite-size pieces. Spread the chopped squash evenly on two rimmed baking sheets. Add 2 Tbs of melted butter, and 2 tsp maple syrup. Sprinkle cinnamon, cayenne, salt and pepper evenly over the spread squash. Toss to coat.
  • Roast for 25-35 minutes stirring and tossing every 10 minutes. The squash is done cooking when it starts to become crispy and dark in places
